Power Protein Bites
It’s summer recipe time! These healthy and delicious snacks are simple to make and ideal for an on the go pick me up! They are packed full of nutritious ingredients and way more tasty than many dry, dull protein bars.
INGREDIENTS:
- 2 cups cooked quinoa or rolled oats (gluten free optional)
- ½ cup cacao powder
- ½ cup coconut flour
- ½ cup pitted dates
- 1 tsp. cinnamon (more if you like)
- 2 Tbsp. pure maple syrup
- 1 Tbsp. coconut oil
- ¼- ½ cup chocolate chips
- 2 scoops protein powder **I use JP+ COMPLETE chocolate or vanilla
- Finely shredded coconut/ Or ground flax seeds
Transfer warm quinoa or oats to food processor, add dates, cacao powder, coconut flour and protein powder and cinnamon, one at a time, pulsing between each ingredient to combine.
Add maple syrup and coconut oil to moisten. Pulse to combine. You can add water to achieve desired consistency, but should be like cookie dough.
Stir in chocolate chips.
Form into balls, using cookie dough or melon scoop, to make bite size balls. Using your hands roll into balls, then roll in shredded coconut.
Refrigerate. Enjoy!
