Pumpkin Seeds for energy
It’s Fall and there are all kinds of pumpkin treats everywhere! Special coffees with Pumpkin Spice, Pumpkin Scones, and of course Pumpkins all around as decoration. Did you know that pumpkin seeds are a good source of energy too? Pumpkin seeds contain magnesium, which is essential for energy production at the cellular level. It plays an important role in the production of a molecule called adenosine triphosphate or ATP, the end product of food’s conversion to energy. Magnesium also relaxes muscles and aids sleep. If we don’t have enough, we feel tired and week. A quarter cup of pumpkin seeds has 185 milligrams; a cup of cooked spinach has 157. Men should aim for 400-420 milligrams of magnesium/day; women 310-320mg.
You can dry those seeds from your Halloween pumpkin, then roast them in the oven with a little olive oil and sea salt.
