Cauliflower Rice
Whether you are following the latest diet craze like the Paleo or eating like the people of the Mediterranean, (which I’m a fan of) eating a diet rich in fruits and vegetables is key to living a long and healthy life. Fruits and Veggies are loaded with anti-oxidants to fight free radicals. I wanted to share this simple recipe which can be added as a side to fish or chicken, or as a rice substitute in a veggie- packed stir-fry. Cauliflower is a mere 29 calories per cup and a rich source of vitamin C, K, folate and fiber.
Simple rice cauliflower:
1 head cauliflower
1 Tbsp. Olive oil or Coconut Oil
1 Medium onion
2 cloves garlic
Season with Sea Salt, Paprika, Cayenne Pepper
Add your favorite herbs such as Basil or Cilantro
Wash and drain the cauliflower; chop into small pieces.
Add to food processor and pulse until coarse like rice.
Saute the onion and garlic in oil for about 10 minutes.
Add the rice-like cauliflower to your saute and season with salt, peppers and herbs. You can add other veggies like mushrooms, red or yellow peppers, tomatoes, etc.
Do not overcook- you will save important nutrients!
